Chef Trevor Payne to lead kitchen at new Tanner Creek Tavern

PORTLAND, Ore. – June 7, 2017 – Veteran Portland chef Trevor Payne has been chosen to lead the culinary team at Tanner Creek Tavern, the new Pearl District restaurant by David Machado opening in late summer. Payne brings over fifteen years of industry experience to his new role as Tanner Creek’s chef de cuisine, including sous chef positions at Olympia Provisions, Little Bird Bistro and Taylor Railworks.

Payne’s culinary influences began at home with his mom, who was a self-taught cook and owner of a café in Asheville, North Carolina, known for its from-scratch soups, sandwiches, and a mean chocolate chip-potato chip cookie. In his teen years, Payne worked at the local Outback Steakhouse and eventually a pizzeria during college.

“My parents were my earliest supporters,” he says. “To this day my mom and I can talk for hours about recipes and ingredients.” One day his father found The French Laundry Cookbook in a used bookstore and brought it home to his son. “Cliché as it was, that was my first real cookbook. For the first time I realized there was more to cooking than steaks and pizza at chain restaurants.”

Payne relocated to Portland in 2007 to attend the Oregon Culinary Institute to complete his undergraduate degree in food and nutrition, graduating in 2008. During culinary school he worked full time at Clyde Common and eventually secured an internship at Portland’s new little French bistro, Le Pigeon.

Payne’s culinary training and passion ranges from French and European influences to more internationally-inspired dishes. “I’m really excited about one of our new dishes — harissa-stewed clams with fried potatoes and roasted fennel,” says Payne. More of the Tanner Creek menu will be revealed in the coming months.

“We’re thrilled to welcome Trevor to our culinary team and confident he will create a menu that is seasonal, thoughtful and well balanced, while adding his personal, creative spin,” says Tanner Creek Tavern owner, David Machado. “During his final job interview, his wife called to tell him she was in labor with their first baby. He had already wowed me and my general manager with his cooking, so while we appreciated his dedication, we shooed him off to go have a baby, knowing that the job would be his!”

About Tanner Creek Tavern
Tanner Creek will open in early fall 2017 at the corner of NW 9th and Everett, adjacent to the new Hampton Inn Suites, which is due to open mid-summer. The new 5,000-square-foot restaurant is owned and operated by David Machado Restaurants and will bring together bits of Portland history. Tanner Creek, named for an old tannery built by an early Portland settler in 1845, currently traces an underground path beneath the Pearl District and flows into the Willamette River near the Broadway Bridge. The restaurant décor will include industrial elements that speak to the city’s early industrialization period: with concrete, steel, Douglas Fir beams, tile and glass. The restaurant will consist of a dining room, lounge area and bar, two private dining rooms, and seasonal sidewalk seating.  More details on the menu will be announced in the upcoming months.
