Clyde Common sweetens up with new Pastry Chef Kristen Napoleoni

(FOR IMMEDIATE RELEASE) – Clyde Common, a diversely influenced European style tavern in the heart of bustling downtown Portland, kicked off 2016 by welcoming pastry chef Kristen Napoleoni to lead the restaurant’s pastry program.

Developing a sweet tooth and love of baking early in life, Napoleoni officially started her culinary career attending the Culinary Institute of America in Hyde Park, New York. She worked in Chicago as a pastry assistant at Perennial Virant, Lula Café and several other notable restaurants before moving to the Portland area. Napoleoni previously worked with Clyde Common’s Executive Chef Carlo Lamagna in Chicago, so she jumped at the opportunity to work together again and be part of such an inventive and energetic kitchen.

Napoleoni’s pastry program at Clyde Common will be seasonal and approachable, featuring classic desserts with adventurous elements added through technique and ingredients. Highlights from the new dessert menu include Caramel Panna Cotta with pear aigre-doux, mandarin sauce and brandy pearls; Coconut mousse with Key lime custard and white chocolate feuilletine; Chocolate Cremeaux with candied beets, cookie crumbs and pickled green strawberry gel; a Petit Fours plate of house candies and cookies; and a seasonal selection of ice cream and sorbet.

Clyde Common has also been able to develop their bread program thanks to Napoleoni. They are now baking nearly all of their breads for lunch, brunch and dinner in-house, including demi baguettes, dinner rolls, burger buns, Hawaiian rolls, and sandwich bread.
