Indian cuisine is one of the most popular regional/ethnic foods in the United States, where diabetes affects more than 30 million people. The INDIAN CUISINE DIABETES COOKBOOK brings the taste, aroma, and health benefits of basic and exotic Indian spices into the kitchen for those with diabetes or prediabetes, or those simply looking to eat healthier and feel better.
Passion for Spices founder May Abraham Fridel comes from a culture where fresh foods are prepared in seasonally appropriate, wholesome and gourmet style. Growing up in Kerala, India—recognized as the spice center of the world—she discovered a wide variety of curries and other high-quality spices that are rich with anti-oxidants and anti-inflammatories to help boost the immune system and delight the palate. In her new cookbook she shares her passion for wholesome, healthful cooking while honoring this culinary heritage.
The recipes have been designed to meet the American Diabetes Association’s nutrition guidelines. Each recipe has been carefully crafted to deliver authentic and bold Indian flavors while using simple techniques and tips for the modern cook who doesn’t have the time nor the complicated tools used in traditional Indian cooking. Recipes include:
Spiced Apple Pancakes
Masala Omelette with Mixed Veggies
Roasted Corn and Sweet Potato Soup
Chia Seed Falooda
Whole Wheat Spinach Parathas
Bitter Melon Chips
