Hand harvested at the crack of dawn in August, these Chardonnay grapes were then fermented solely in stainless steel. Owner/winemaker Sitara Perez was going for a crisp, bright Chardonnay so she chose not to take it through malolactic fermentation nor age it in oak barrel, as these winemaking techniques would reduce the fresh crisp notes she wanted to retain. The finished Chardonnay is a great expression of the Valle de San Vicente growing region, just to the southeast of Ensenada, Mexico.
Bouquet and palate:
Honeydew melons were wrapped in citrus notes of grapefruit, fresh and grilled lemons. Mineral notes of flint combined with honeystick danced alongside the melon and citrus, culminating in a white ginger finish that left me ready for my next sip.
Food pairing suggestions:
Baked tilapia with roasted vegetables, crunchy eggplant and corn salad with mint and feta, blistered shishito peppers with crispy quinoa.
