2019 Valle Girl Vino Rebellious Girl La Rebelde Cabernet sauvignon
Valle de Guadalupe, Baja California Norte, Mexico
Empty bottle weight: 24.3 ounces / 689 grams
Low sulfites, gluten-free, non-GMO, vegan
I don’t think I’ve ever had the opportunity to taste an unoaked Cabernet before! While still in the tank, this wine wowed the mother and daughter Valle Girls, so they decided to bottle it without any oak aging. No doubt an unconventional decision, it was exciting to taste such a unique wine.
From the Valle Girl Vino tasting notes:
Bouquet and palate:
Fruity notes of ripe red and black plums mingled with tart raspberries and cherries. With air, this wine slowly evolved into a port-flavored marzipan that was almost chewy in texture. It was a real treat to get to know Cabernet sauvignon on its own terms, before any oak treatment!
Food pairing suggestions:
Lamb shepherd’s pie, caramelized onion and goat cheese tart, garlic and thyme whole roasted chicken with potatoes.
