I don’t think I’ve ever had the opportunity to taste an unoaked Cabernet before! While still in the tank, this wine wowed the mother and daughter Valle Girls, so they decided to bottle it without any oak aging. No doubt an unconventional decision, it was exciting to taste such a unique wine.

“This wine has the purest, non-intervention Cabernet expression you have ever tasted. When the winemaker Sitara realized that she was going to bottle this young wine, she knew that she needed a special label. She chose this image of a brave young woman from the Mexican Revolution. Like her, this wine is young, pure and fearless. Sometimes you have to do what feels legitimate.”

Bouquet and palate:

Fruity notes of ripe red and black plums mingled with tart raspberries and cherries. With air, this wine slowly evolved into a port-flavored marzipan that was almost chewy in texture. It was a real treat to get to know Cabernet sauvignon on its own terms, before any oak treatment!

Food pairing suggestions:

Lamb shepherd’s pie, caramelized onion and goat cheese tart, garlic and thyme whole roasted chicken with potatoes.
