This combo of 50% Gravenstein apple cider and 50% Sauvignon blanc wine grapes co-fermented together and made into “apple wine” is a first for me! With abundant acidity, it’s quite tart… and fun. It shouldn’t surprise you that both the cider and wine flavors are prominent and pretty equally balanced. Don’t have any idea how it will age, so if anyone does try cellaring it, let me know how it tastes a couple years.
