FULLERTON WINE BAR & TASTING ROOM WELCOMES SEASONED CHEF, ROB GRISHAM, ALONG WITH NEW DINING MENU
PORTLAND, Ore. (Dec. 9, 2021) – Fullerton Wine Bar & Tasting Room has welcomed seasoned chef, Rob Grisham, along with a new menu of dishes made from scratch, available daily at its Portland location at 1966 NW Pettygrove Street. Chef Grisham has designed the new menu with the same care and craft in which Fullerton’s wines are created, with a culinary perspective that brings simple, refined dishes with both indoor or heated and covered outdoor seating. In addition, new pairing menus will be available every Thursday starting December 9th.
Fullerton Wines, the Willamette Valley winery known for its exploration of the region’s American Viticultural Areas (AVA), crafts single vineyard Pinot Noirs from every AVA in the Willamette Valley. Chef Grisham has designed Fullerton’s approachable new menu to accompany its wines, which will include a rotating house-made filled pasta.
Chef Grisham, a self-taught cook and Wisconsin native, started his career cooking in and around the Madison, Wisconsin, area for 15 years, showcasing the region’s seasonal bounties. For seven years, he worked as the executive chef at Brasserie V before creating Isthmus Dining Company, a nomadic restaurant concept serving seasonal tasting menus. One of Grisham’s Isthmus pop-up events was in the intimate space of renowned architect Frank Lloyd Wright’s studio, with a seven-course tasting menu using food and resources grown on the property’s estate, providing an experiential tasting of the spectacular place.
Most recently, Grisham worked at The French Laundry in Napa Valley, an iconic 3-Michelin star French and Californian cuisine dining destination, before moving to Portland to join the Fullerton Wine Bar & Tasting Room team. At The French Laundry, one of Grisham’s tasks included making the restaurant’s handmade pastas, which he brings to Fullerton with his winter squash ravioli with delicata and pistachios as well as the duck-and-chevre ravioli on his initial tasting menu.
“I’m excited to bring approachable dishes here that are done extremely well, using my classic French training and pulling Italian influences to establish Fullerton Wine Bar & Tasting Room as a dining destination in Portland,” said Grisham. “I’ve already fallen in love with Portland’s local markets and purveyors, and am looking forward to diving into Oregon’s unique products and flavors to bring new dishes to the community. I am inspired by the unique opportunity to design a menu to pair with wines from every Willamette Valley AVA.”
Chef Grisham will offer five-course Thursday pairing dinners starting this week on Thursday, December 9th, with all dishes made from scratch through weekly creative culinary explorations and optional wine pairings with each course. Tickets are available at $95 per person with an accompanying wine pairing available for $55 per person. Wine club members will receive 15-25% off wine pairings. Wine pairing add-ons are optional, as guests may select from other Fullerton wine offerings. On Sunday, January 23rd, Chef Grisham will host an AVA wine dinner along with winemaker Alex Fullerton, showcasing varying courses to pair with wines from each Willamette Valley AVA.

ABOUT FULLERTON WINES
Fullerton Wines explores the rich and varied AVAs of Oregon by expressing the distinct personality of each vineyard and vintage in the bottle. Founded in the Fullerton family garage in 2011, the winery is a deeply personal family collaboration. Winemaker Alex Fullerton first got into the industry when his father Eric suggested the career path while wine tasting in the Willamette Valley after Alex had just graduated from the University of Oregon in 2010. That conversation led to Alex having a harvest internship with Penner Ash Wine Cellars which started the very next day. When making their first vintage in 2011, Alex and Eric made a few barrels of Pinot Noir. Despite the challenging vintage, the wine impressed and Fullerton Wines was born.
The Fullerton Wine Bar & Tasting Room is authentically Pacific Northwest with a Scandinavian heart that brings a taste of Oregon wine country to Portland. Guests come for hygge hospitality, wines that explore Oregon’s AVAs, and abundantly creative dishes. Opened in 2017, the Fullerton Wine Bar & Tasting Room is a cozy and welcoming gathering place for wine lovers to experience the breadth of Fullerton Wines’ selection while enjoying seasonal dishes from Chef Rob Grisham.
