Hip Chicks do Wine Riot Girl Cranberry Sparkler
Portland’s oldest urban winery, Hip Chicks Do Wine, was started back in 2001 by Laurie Lewis and Renee Neely. Located just off the main drag, in an unassuming pocket of industrial warehouses, visitors walk right into the middle of the winery action as they enter the building. Off to the left, the tasting room area is inviting and all decked out for the holidays right now. Not only do they offer wine but also fudge made using one of the Hip Chicks wines, along with other accessories and gift items for wine lovers.
Like the Winerabblers, the Hip Chicks love drinking rosé no matter the season. As Laurie was working the bottling line for their Riot Girl rosé, a blend of 60% Zinfandel and 40% Pinot gris, she was immediately struck by the cranberry, pomegranate and red apple aromas in her wine. At that instant she knew she would make a cocktail with this wine for the holidays. And while many wineries sell out of rosé long before winter kicks in, the Hip Chicks make enough to last a bit longer.
So Laurie mixed and mixed, finally creating this Riot Girl Cranberry Sparkling cocktail, perfect for the holiday season.
Ingredients:
1 bottle of Hip Chicks do Wine Riot Girl Rosé
1 bottle of Prosecco or sparkling wine of your choice
Fresh mint leaves
Cranberries (frozen to keep your drink cold)
Ice
Instructions:
Start by placing a few leaves of mint in the bottom of your glass with a few ice cubes. Use a muddler or end of a wooden spoon to muddle (or bruise) the mint leaves
Add about 3 ounces of Hip Chicks do Wine Riot Girl Rosé
Top with 2 ounces of Prosecco or Sparkling Wine
Garnish with frozen cranberries
Drink!
(1 bottle of Rosé should make about 7 cocktails)
