I.G.T. Bianco Toscana // Viognier & Sauvignon blanc
Con Vento means “hill of wind” and accurately portrays the Mediterranean breezes that cool the growing grapes. In fact, fossils and stones from the ocean floor litter the vineyard, lending mineral notes to the fruit.
This white wine is a blend of Viognier and Sauvignon blanc grapes, all fermented and aged in steel casks. None of the juice went through malolactic fermentation but it did rest on the fine lees for 6 months with regular gentle stirring. The finished wine is refreshing, light, and extremely food-friendly!
