The Chardonnay grapes in this sparkler come from two different vineyards in Oregon’s Willamette Valley. After being hand-picked, the grapes were chilled overnight before being gently pressed. Each lot was kept separate and fermentation occurred in a variety of vessels– stainless steel and French oak barrels, along with stainless steel tanks. Doing this provided Lytle-Barnett with a harmony of aromas and flavors from which to blend together in the Spring of 2017 when it came time to bottle. After 3 years on the lees, the wine was disgorged and a small dosage of 3.5g/L was added to round out the palate. It spent another 6 months in bottle before becoming available for purchase. The finished sparkling wine has high levels of acidity and minerality, perfect for pairing with all kinds of food.
