This bottle of sparkling wine really did live up to its name! Immediately after removing the cage, the cork flew up to the ceiling and out gushed wine! What an exciting way to welcome Spirito to the world!

Made using 80% Pinot noir and 20% Chardonnay, the wines were first barrel-fermented, then went through disgorgements, some at 19 months, some at 23 months, and finally, the batch I’m writing about, at 31 months.

Bouquet:

As I smelled this wine, fruity aromas of bing cherries, strawberries and cream, and orange zest tickled my nose.

Palate:

With each sip, the bubbles revealed fruity flavors of green apples, strawberries, bing cherries, raspberries, and pomegranates. This wine was both creamy and tart with a full mid-palate. It finished with abundant flavors of lemon zest.

Food pairing suggestions:

Strawberry shortcake, nigiri sushi, fried chicken, vegetable tempura.
