King Estate follows biodynamic farming practices in all its vineyards. The Pinot noir and Chardonnay grapes for this particular wine were picked early, retaining high levels of natural acidity, necessary for any sparkler. Made in the traditional or champagne method, where secondary fermentation occurs in the bottle, it’s the most complicated way to create abundant bubbles in sparkling wine. After aging for three years in bottle, known as en tirage in French, the wine was disgorged of the yeast plugs that develop and finished with what King Estate calls “a liqueur d’expedition.” This brut sparkling wine is creamy with abundant bubbles, making it a perfect match for a wide variety of foods and occasions.
