Soter’s winemaker, Chris Fladwood, left 10% of the grapes as whole clusters in order to impart more natural tannins into this Pinot. After an extended maceration of 25 days, which allowed for more color, aroma and flavor extraction, the wine was aged for 10 months in barrel.
Earthy and hearty, this Pinot noir had a nice, grippy texture that quickly shifted to something much more supple. It was a bit like how your skin feels after applying a dash of talc powder. Such an interesting sensation to experience while enjoying a glass of wine!
