Bouquet:

First, I smelled floral aromas of jasmine flowers and orange blossoms, then mineral notes of gravel dust, and finally, fruity pineapples and bruised apples.

Palate:

This Pét-nat truly was wild! It had an earthy, kombucha-like quality to it with fizzy bubbles and flavors of mushrooms. Popsicle stick and ginger emerged, along with fruit notes of pineapple, lychee, kaffir lime leaves, and bruised apples. It was a rollercoaster of both tangy and tart that ended in a nutty finish.

Food pairing suggestions:

It’s a light wine so pair it with lighter, earthy flavors such as grilled quail with goji berries and pine nuts, sashimi, salad with goat cheese and hazelnuts.
