The white grape Verdejo (pronounced “ver-DAY-ho”), is widely planted in the Rueda region of Spain, but practically unknown in America. Tart, mineral-driven yet fuller-bodied, it’s a great alternative to Pinot gris or Sauvignon blanc, and pairs beautifully with seafood and spicy dishes.
