Family-owned Walla Walla Vintners, founded in 1995, was the eighth winery in the Walla Walla Valley! Specializing in red wines (and a rosé each vintage), they source fruit from the Columbia and Walla Walla Valleys, as well as grow their own grapes at their estate Cut Bank Vineyard. This Cabernet contains estate fruit and grapes grown at six other vineyards in the Walla Walla Valley, making it a cuveé that well represents the AVA.
Color:
Burgundy red
Bouquet:
Savory notes of herbs, including bay leaf and rosemary, balanced fruity dark, black cherries and vanilla spice.
Palate:
Made primarily with Cabernet sauvignon grapes, Walla Walla Vintners added just 8% Petit Verdot, 3.5% Cabernet franc, and 3.5% Merlot, all aged in 57% new oak for 23 months. The resulting wine was filled with black cherries, plums, and raspberries, along with spice notes of cinnamon and vanilla. Initially, prickly tannins made my tastebuds stand at attention but soon softened with time in my glass.
Food pairing suggestions:
Garlic-herbed grilled tuna steaks, cheeseburgers, hot smoked tofu with vegan coleslaw.
Pro-tip: drink it slightly chilled on warm days!
